Amish Black Bottom Cupcakes: Delicious Recipe


Amish Black Bottom Cupcakes
Ingredients  & Directions
Preheat oven to 350 degrees
  • 8 oz. cream cheese
  • 1 egg
  • 1/3 cup sugar
  • 1 cup chocolate chips
  • Combine and mix cream cheese, egg and sugar. Stir in chocolate chips.

  • 2 ¼ c. flour
  • 1 ½ c. sugar
  • 6  tablespoons cocoa
  • 1 ½ tsp. baking soda
  • 1 ½ c. water
  • 1/3 c. plus 3 tablespoons oil
  • 1 ½  tablespoons vinegar
  • 1 ½ teaspoons vanilla
Mix above ingredients until well mixed. Fill lined cupcake tins 1/3 full of chocolate batter. Top batter with heaping tablespoon of cream cheese mixture.
Bake at 350 degrees for 15 – 18 minutes.

Amish Brown Sugar Pie


A sweet treat from Amish Country: Brown Sugar Pie

Ingredients
  • BROWN SUGAR PIE
  • Makes one 9-inch pie
  • 2 cups firmly packed brown sugar
  • 2 eggs, lightly beaten
  • 2 teaspoons pure vanilla extract
  • 4 heaping Tablespoons flour
  • 6 Tablespoons milk or half and half
  • 4 Tablespoons melted butter
  • 1 9 inch pie crust

Instructions
  1. Preheat oven to 350 degrees.
  2. Combine all the ingredients in a bowl and mix thoroughly.
  3. Roll out the dough, press into a 9-inch pie plate, trim off any excess dough around the edges.
  4. Pour the brown sugar mixture into the pie shell and bake for 35 to 40 minutes, or until crust is lightly browned and the filling has set. Remove from oven and let cool slightly before serving

Amish Country Fried Pork Chops – Sunday Dinner Delight


Amish Country Fried Pork Chops

Ingredients:
8 bone-in pork chops (about 3/4-inch thick)
2 eggs, beaten

Amish Fried Pork Chops

1 tsp hot sauce
1 cup flour
1 tsp paprika
2 tsp kosher salt
1 tsp ground black pepper
1/4 cup vegetable oil

For the gravy:
3 Tbsp flour
2 1/2 cups milk
1/2 tsp salt
1/2 tsp ground black pepper
Preheat oven to 350 degrees

Directions:

  • Mix eggs and hot sauce together in a shallow dish. 
  • Combine flour with paprika, 1 tsp salt, and 1/2 tsp pepper.
  • Season both sides of pork chops with the remaining salt and pepper. 
  • Dip each chop into the egg mixture, shake to remove excess. 
  • Place meat into the flour mixture, coat both sides. 
  • Heat oil in large cast iron skillet over medium-high heat. Brown each pork chop on both sides.  
  • Bake browned pork chops 30 minutes at 350 degrees.
Gravy

  • Add the flour to the pan drippings in the skillet. 
  • Whisk to combine, and let cook for about 2 minutes. 
  • Slowly pour in the milk, and whisk constantly until mixture has thickened – about 3 minutes. Add the salt and pepper, and season to taste with more if desired.
Remove chops from oven and plate, serving the gravy on top of the chops. Pour remaining gravy into a serving dish and serve alongside with the chops on the table.

Friday and Saturday, Feb. 23 and 24, at the Strasburg Fire Co., 203 Franklin St., Strasburg. Small crafts auction is Friday, 5 to 8 p.m., and Saturday’s auction starts at 8:30 a.m. 
The 54th annual all-day mud sale will be held Friday, March 2, and Saturday, March 3. The small crafts auction on Friday will be from 4:30 to 8 p.m. The building material sale on Saturday starts at 8:30 a.m. It’s held at 11 Furnace Road, Quarryville. Breakfast will be served Saturday starting at 6 p.m. You can get more information on payment and buying here.

The sale Friday is from 5 to 8 p.m. and includes groceries, crafts, tools and frozen food. Saturday’s auction starts at 8 a.m. at 1441 North Penryn Road, Manheim. Amish Pasta Casserole – Perfect For A Blustery Day


Amish Pasta Casserole – Perfect For A Blustery Day

Ingredients

  • 16 oz Rigatoni
  • 1 TB Olive Oil
  • 1.5 pounds ground beef
  • 1 can  Tomato Soup
  • 1 can  Mushroom Soup
  • 1 cup Milk
  • Salt and Black Pepper to taste
  • 1/2 tsp Paprika
  • 1/2 tsp Dried Parsley
  • 1 tsp Oregano

Directions

  • Pre-heat the oven to 350 degrees – spray a large oven dish with cooking spray.
  • Cook the Pasta, in a large pot, as per the instructions on the box.
  • Meanwhile, saute the Onion in the Olive Oil until soft – add the Ground Beef and cook until done.
  • As soon as the Pasta is done – drain and return to the pot.
  • Add the cooked Meat, Oregano, Tomato and Mushroom Soups and Milk to the Pasta – stir through – season to taste with Salt and Pepper.
  • Transfer to the prepared oven dish – sprinkle with Paprika and Parsley – bake 25 – 30 minutes.

Serve with Parmesan cheese, fresh bread or garlic toast.

Review of the Amish Country Theater, Walnut Creek, Ohio


The Amish Country Theater

Took my 7 year old twins to the Christmas show at the theater.
The show was great and the staff and performers were friendly. The girls got to meet Ventriloquist Ken Groves, singer John Schmid, (both of whom, I have known for a long time), Lynard and several of the other performers.
What follows is their review of the show, as well as some pictures from the event.
