Amish Country Fried Pork Chops – Sunday Dinner Delight


Amish Country Fried Pork Chops

Ingredients:
8 bone-in pork chops (about 3/4-inch thick)
2 eggs, beaten

Amish Fried Pork Chops

1 tsp hot sauce
1 cup flour
1 tsp paprika
2 tsp kosher salt
1 tsp ground black pepper
1/4 cup vegetable oil

For the gravy:
3 Tbsp flour
2 1/2 cups milk
1/2 tsp salt
1/2 tsp ground black pepper
Preheat oven to 350 degrees

Directions:

  • Mix eggs and hot sauce together in a shallow dish. 
  • Combine flour with paprika, 1 tsp salt, and 1/2 tsp pepper.
  • Season both sides of pork chops with the remaining salt and pepper. 
  • Dip each chop into the egg mixture, shake to remove excess. 
  • Place meat into the flour mixture, coat both sides. 
  • Heat oil in large cast iron skillet over medium-high heat. Brown each pork chop on both sides.  
  • Bake browned pork chops 30 minutes at 350 degrees.
Gravy

  • Add the flour to the pan drippings in the skillet. 
  • Whisk to combine, and let cook for about 2 minutes. 
  • Slowly pour in the milk, and whisk constantly until mixture has thickened – about 3 minutes. Add the salt and pepper, and season to taste with more if desired.
Remove chops from oven and plate, serving the gravy on top of the chops. Pour remaining gravy into a serving dish and serve alongside with the chops on the table.

Friday and Saturday, Feb. 23 and 24, at the Strasburg Fire Co., 203 Franklin St., Strasburg. Small crafts auction is Friday, 5 to 8 p.m., and Saturday’s auction starts at 8:30 a.m. 
The 54th annual all-day mud sale will be held Friday, March 2, and Saturday, March 3. The small crafts auction on Friday will be from 4:30 to 8 p.m. The building material sale on Saturday starts at 8:30 a.m. It’s held at 11 Furnace Road, Quarryville. Breakfast will be served Saturday starting at 6 p.m. You can get more information on payment and buying here.

Friday, March 16, and Saturday, March 17. Friday’s events include a preview of Saturday’s auction, starting at noon. The sale Friday is from 5 to 8 p.m. and includes groceries, crafts, tools and frozen food. Saturday’s auction starts at 8 a.m. at 1441 North Penryn Road, Manheim. Homemade food will be available at noon, and you can get the tentative auction times here.

The auction starts at 4:30 p.m. on Thursday, March 22, at 74 E. Farmersville Road, Ephrata. 
Friday, March 23, and Saturday, March 24. The 42nd annual sale starts Friday with a craft auction from 5 to 8 p.m. Crafts will start at 5; shrubbery and flowers start at 6:30. The auction Saturday starts at 8 a.m. at 802 Pequea Ave., Gap. You can get approximate sale times here.

Amish Pasta Casserole – Perfect For A Blustery Day

Ingredients

  • 16 oz Rigatoni
  • 1 TB Olive Oil
  • 1.5 pounds ground beef
  • 1 can  Tomato Soup
  • 1 can  Mushroom Soup
  • 1 cup Milk
  • Salt and Black Pepper to taste
  • 1/2 tsp Paprika
  • 1/2 tsp Dried Parsley
  • 1 tsp Oregano

Directions

  • Pre-heat the oven to 350 degrees – spray a large oven dish with cooking spray.
  • Cook the Pasta, in a large pot, as per the instructions on the box.
  • Meanwhile, saute the Onion in the Olive Oil until soft – add the Ground Beef and cook until done.
  • As soon as the Pasta is done – drain and return to the pot.
  • Add the cooked Meat, Oregano, Tomato and Mushroom Soups and Milk to the Pasta – stir through – season to taste with Salt and Pepper.
  • Transfer to the prepared oven dish – sprinkle with Paprika and Parsley – bake 25 – 30 minutes.

Serve with Parmesan cheese, fresh bread or garlic toast.

The Amish Country Theater

Took my 7 year old twins to the Christmas show at the theater.
The show was great and the staff and performers were friendly. The girls got to meet Ventriloquist Ken Groves, singer John Schmid, (both of whom, I have known for a long time), Lynard and several of the other performers.

A Timeless Feast: Amish Thanksgiving Cranberry Roast with Gravy

Ingredients

Cranberry Roast with Gravy
2 tbsp. vegetable oil
1 (4 lb.) boneless beef pot roast
1/2 tsp. ground cinnamon
1/4 tsp. ground ginger
1/4 tsp. pepper
1/3 cup water
2 tsp. salt
1 (16 oz.) can whole berry cranberry sauce
2 tsp. cornstarch
2 tbsp. water

Directions

  • In 8-quart Dutch oven over medium high heat add vegetable oil.
  • Cook beef pot roast until browned on all sides.
  • Stir in cinnamon, ginger, pepper, the 1/3-cup water and salt.
  • Heat to boiling.
  • Reduce heat to low; cover and simmer 2 hours turning meat occasionally.
  • About 15 minutes before meat is done, add cranberry sauce to liquid in Dutch oven; continue cooking until roast is fork tender.
  • When roast is done, remove to cutting board. In cup, stir cornstarch and the 2 tbsp. of water until blended.
  • Stir into liquid in Dutch oven; cook stirring constantly until boils and thickens slightly. Slice meat and serve with gravy.

Amish Pumpkin Fritters


Amish Pumpkin Fritters
Ingredients:
2 tsp. cinnamon
4 Tbsp. Sugar
Amish Pumpkin Fritters 1 (15 oz) can pumpkin purée, NOT PIE FILLING
1/4 tsp. salt
1 cup flour
2 Tbsp. butter
1 lg. egg, beaten
2 Tbsp. vegetable oil
1 Tbsp. sugar
1/2 tsp. ground cinnamon
1 tsp. baking powder

DIRECTIONS:
Mix the 2 tsp. cinnamon and the 4 Tbsp. sugar together and set aside.
I add the pumpkin, flour, egg, 1 tablespoon sugar, baking powder and salt together and mix until fully incorporated.
To a skillet, over medium-high heat, add the butter and the oil.
I drop about 2 tablespoons batter into the heated oil/butter mixture and lightly flatten with a spatula. (Cook a few at a time)
Cook until light golden brown on one side, flip and cook on the other side until light golden brown. About 3-4 minutes per side.
Immediately sprinkle both sides with a little bit of the cinnamon/sugar mixture.
Best served warm.

Serve as is or with Maple syrup and/or whip cream.
  MAPLE WHIPPED CREAM
  INGREDIENTS:
  maple whipped cream
  ½ pint heavy whipping cream
  2 tablespoons pure maple syrup
  DIRECTIONS:
  Combine the maple syrup and heavy cream in a mixing bowl and mix on high until stiff peaks form
