Ingredients

Cinnamon Sugar Topping

  • ¼ cup granulated sugar
  • 1 teaspoon cinnamon

Brown Sugar Swirl

  • ¼ brown sugar light or dark
  • 2 teaspoons all-purpose flour
  • pinch sea salt
  • 1 teaspoon cinnamon

Muffins

  • 2 large eggs brought to room temperature
  • 6 tablespoons unsalted butter melted and then cooled
  • ¼ cup milk may be whole, 2%, or buttermilk
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar light or dark
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 1 large apple cored, peeled, and finely chopped

Instructions

  • Preheat your oven to 350°F and line a standard muffin tin with liners. In a small bowl, combine cinnamon and granulated sugar. Mix well and set aside.
  • To make the brown sugar swirl, stir together the brown sugar, flour, sea salt, and cinnamon. Peel, core, and finely chop the apple. You want the pieces to be a nice dice as you would an onion. Set both aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the room temperature eggs along with the cooled melted butter, milk, and vanilla at medium-low speed until well combined.
  • In a large mixing bowl, whisk together flour, both brown and granulated sugars, baking powder, ground cinnamon, and sea salt.
  • Add flour mixture to wet ingredients and mix on medium-low until incorporated.
  • Detach the bowl from the stand mixer and use a wooden spoon to fold in both the chopped apple and brown sugar swirl. Mix until JUST combined. 
  • Fill the muffin liners. I use a scoop.
  • Sprinkle the cinnamon sugar over the muffin tops and bake on the center rack for 22 to 24 minutes
  • Remove the muffins from the pan and cool on a wire rack for at least 10 minutes.
  • Store any leftovers in an airtight container at room temperature for up to 3 days. To avoid the muffins becoming soggy in the container, make sure to cool the muffins completely before loading into the container.

These muffins are not only a delicious way to enjoy the traditional snickerdoodle and the goodness of apples but also an excellent opportunity to get creative. You can add chopped nuts like pecans or walnuts for an added crunch or even incorporate a drizzle of caramel for an extra touch of decadence.
